Del Lago Resort & Casino Opens Search to Hire Pair of Executive Chefs to Lead Portico by Fabio Viviani, Casino Restaurants

No reality show experience required to run restaurant by ‘Top Chef’ alum Fabio Viviani
TYRE, N.Y. October 05, 2016 — Del Lago Resort & Casino has opened up a search for a pair executive chefs to lead two distinct food-service operations. One will run Portico by Fabio Viviani, while the other will be in charge of casino including the Farmers Market buffet and the Vine.
In August, del Lago announced its partnership with Viviani to have him shape the direction of Portico. The former “Top Chef” star, restaurateur and author is eager to see his new restaurant take shape.
“This is an opportunity for the talented chefs in this area to put their skills on display at what will be the most popular destination in the Finger Lakes,” Viviani said. “I’m looking forward to working with them to bring this vision to life and see how we can help people enjoy this beautiful region even more.”
Executive chefs require knowledge of safe food preparation techniques, as well as knowledge of menu development, cost and wage control. For Portico, an Italian-themed restaurant, del Lago is searching for someone with experience preparing Italian cuisine. The restaurant will feature a sophisticated take on Old World Italian-inspired foods and handmade pastas, as well as seafood, steaks and chops grilled over hardwood. Likewise, candidates for the Farmers Market Buffet and Vine position should have experience with quality high-end and large volume.
Both Portico as well as the Farmers Market and Vine aim to further del Lago’s mission of promoting foods and beverages produced in the Finger Lakes region. Del Lago’s executive chefs will be integral in creating a farm-to-table experience that gets the most out of the immensely diverse agricultural offerings throughout New York.
“Passion is what we’re really looking for with these two positions,” said Jeff Babinski, executive vice president and general manager at del Lago Resort & Casino. “Obviously passion for food, but also for where that food comes from. It’s been our focus from Day 1 to promote the region, and our executive chefs have to share in that vision. This area offers so much to savor, and our chefs will reflect and enhance that.”
